Mindful Chef celebrity ambassador Fearne Cotton has partnered with the health-focused food box company, launching the #MeatFreeMonday campaign, sharing four plant-based recipes from her new cookbook, Happy Vegan.
Mindful Chef took to social media to share the collaboration, posting ‘We’re super excited to announce that this October, four of Fearne’s delicious plant-based recipes from her new cookbook Happy Vegan will be available to order in your box! We can’t wait for you to try them’.
Like Fearne, Mindful Chef believes in balance and encourages people to introduce more plant-based meals into their diet. They are also passionate about cooking with healthy, fresh, sustainably sourced ingredients that are good for you and the planet.
On eating vegan food, Fearne commented, “I eat mainly vegan food but I am not a vegan. I love eggs and my body tells me I need them so I eat them. When I do eat them they’re free range and organic and I won’t have them more than twice a week. I think even if you’re vegan for one day a week that’ll help the planet and also give you a chance to try new recipes and also introduce a lot of brilliant fruit and veg into your diet as well as more beans and pulses. Mindful Chef are offering the chance to try some of my vegan meals and they also have a wide range of other vegan options delivered straight to your door. All of the produce is fresh and sustainably sourced and in the correct quantities so there is no waste and its mega easy to cook up!”
Fearne’s recipes will be available exclusively on the Mindful Chef menu from October 3rd to October 30th 2019. Recipes will include a mouthwatering fennel, tomato and bean gratin, a spicy bean stew, ginger miso tofu and a delicious dahl.
